My name is Serena Hunt and I am a registered dietitian (RD) & certified dietitian nutritionist (CDN) with a commitment to educating others based on scientifically backed nutrition research effective for long term fat loss & robust health. Having received my Bachelors of Science in Nutritional Sciences at Cornell University and completed my dietetic internship at Yale New Haven Hospital, I possess not only the education but practical experience to optimize health. I currently work as a clinical dietitian for acutely ill patients as well as in private practice counseling clients as an outpatient dietitian. My nutrition philosophy is simple and concise; eat often & choose mostly nonstarchy vegetables, proteins, and natural fats. This month’s theme is “going green” for Saint Patty’s Day! Which is easy for me, because I LOVE me some green veggies! Spinach, kale, broccoli, peppers, cucumbers, zucchini, the list is endless!
For breakfast I started my day with some fresh melon and chocolatey cottage cheese: chocolate whey protein powder, peanut butter, nonfat cottage cheese, and cinnamon. Plus a tall glass of black coffee. For such a sweet breakfast, I am proud to report my breakfast was super low in sugar & super chock-full-of energy!
Between breakfast & lunch, I munched on (non-pictured) raw carrots & celery. Its super important to munch on nonstarchy veggies between breakfast & lunch if you skipped out on nonstarchies at breakfast! Plus, celery is green, which is super trendy this month (well, according to Peas & Crayons!).
For lunch, I had a cup of hot tea and a cobb salad sans dressing . My salad was simple, but super filling since it was jam packed with protein! Grilled chicken, hard boiled eggs, tomatoes, olives, carrots, & spinach. Nom nom nom!
Before going to the gym, I made a delicious GREEN smoothie of kale, coconut almond milk, vanilla whey protein powder, plain organic Greek yogurt, and ice cubes. I know green smoothies freak a lot of people out, but I promise you cannot taste the green veggie at all, just the sweet deliciousness of vanilla & coconut!! Garnished with a strawberry, this was like a little taste of summer!
Dinner was divineee and green- all of my favorite adjectives in one! The recipe will be featured on my blog soon (and, guess what, it’s quick & easy!!!) requiring minimal cooking skill & ingredients. Anyway, my balsamic stuffed chicken with balsamic glazed spinach involved chicken breast, balsamic glaze, whole milk mozzarella & copious amounts of spinach! Lots of protein, healthy fats & fiber to keep you full, while keeping your metabolism stoked high and mighty!
I finished off my day with another sweet, but low sugar treat (noticing a trend here?), cocoa pudding. This pudding is made with non-fat ricotta cheese, cocoa powder, pre-melted unsweetened chocolate, two packets of Stevia, & chia seeds. Its only imperfection was that it wasn’t green!
